Tartaric acid,2, 3-dihydroxysuccinic acid. Molecular formula :HOOCCHOHCHOHCOOH, or dihydroxysuccinic acid. There are two asymmetric carbon atoms, there are three stereoisomers, namely: right-handed (D-type, L-type), left-handed (L-type, D-type), meso type. Racemic tartaric acid is commonly known as gluconic acid. Dextric tartaric acid is widely distributed in higher plants in the form of free or K salt, Ca salt, Mg salt, especially in fruits and leaves. In making wine, large amounts of tartar (hydrogen potassium salt) are deposited. It is also found in molds and lichens.
Application:
As antioxidants added to food, they can give it a sour taste. The biggest use of tartaric acid is as a beverage additive. It is also the raw material of pharmaceutical industry. Tartaric acid is an important additive and reducing agent in the mirror-making industry, which can control the formation rate of silver mirror and obtain very uniform coating. Used as biochemical reagent, masking agent and beer foaming agent, also used in tanning industry. L(+) -tartric acid is widely used as a souring agent in beverages and other foods. It is used in wine, soft drinks, confectionery, bread, and certain gummy sweets. It is mainly used as sour flavor agent, separation agent and pharmaceutical raw material.
