Shikimic acid is a white crystalline powder that dissolves easily in water. It is an important metabolic product of plants and microorganisms. Shikimic acid has long been extracted mainly from the dried and ripe fruits of plants such as anise in the anise family or Japanese shikimum .
It is soluble in water and solubility in water is 18g/100ml. It is insoluble in chloroform, benzene and petroleum ether. Melting point 185ºC ~ 191ºC, rotation -180°, sour smell.
